Ingredients
- 4 eggs
- 2 Tbsp. milk
- Salt & pepper
- 1/2 cup Sugardale Diced or Cubed Ham
- 1 Tbsp. green onion, thinly sliced
- 2 tortillas
- 1/2 cup shredded cheddar cheese
- 1/2 avocado, diced
- 2 Tbsp. salsa, plus extra on the side
- Sour cream (optional)
Directions
- In a small bowl, beat eggs and milk together. Season with salt and pepper.
- Scramble eggs in a non-stick skillet over medium heat. Stir in diced ham and green onion when eggs are still slightly runny. Cook for an additional 2-3 minutes until ham is warmed and eggs are fully cooked. Remove from heat.
- Warm tortillas in the microwave for 20-30 seconds.
- Spoon half of the ham mixture into the center of each tortilla. Then top each tortilla with 1/4 cup shredded cheddar cheese, 1 Tbsp. of salsa, and diced avocado. Wrap tortilla to form burrito and serve with extra salsa or sour cream on the side.
