Diced Ham Breakfast Burrito

Ingredients

  • 4 eggs
  • 2 Tbsp. milk
  • Salt & pepper
  • 1/2 cup Sugardale Diced or Cubed Ham
  • 1 Tbsp. green onion, thinly sliced
  • 2 tortillas
  • 1/2 cup shredded cheddar cheese
  • 1/2 avocado, diced
  • 2 Tbsp. salsa, plus extra on the side
  • Sour cream (optional)

Directions

  1. In a small bowl, beat eggs and milk together. Season with salt and pepper.
  2. Scramble eggs in a non-stick skillet over medium heat. Stir in diced ham and green onion when eggs are still slightly runny. Cook for an additional 2-3 minutes until ham is warmed and eggs are fully cooked. Remove from heat.
  3. Warm tortillas in the microwave for 20-30 seconds.
  4. Spoon half of the ham mixture into the center of each tortilla. Then top each tortilla with 1/4 cup shredded cheddar cheese, 1 Tbsp. of salsa, and diced avocado. Wrap tortilla to form burrito and serve with extra salsa or sour cream on the side.
