Loaded Bacon Cauliflower Bake

Ingredients

  • ½ lb. Sugardale Bacon, cooked and chopped
  • 2 lbs. cauliflower florets, steamed
  • 8 oz. cream cheese, softened
  • 1/2 cup sour cream
  • 1 tbsp. garlic, minced
  • 1 tsp. onion powder
  • Salt and pepper to taste
  • 2 cups cheddar cheese, shredded
  • 1 cup Colby jack cheese, shredded
  • 2 tbsp. fresh chives, chopped

Directions

  1. Preheat oven to 425°F.
  2. In a large bowl combine cream cheese, sour cream, garlic, onion powder, salt and pepper and mix until fully combined.
  3. Fold in the cheese, cauliflower, bacon and chives until evenly distributed.
  4. Spread mixture into a greased cast iron skillet and bake for 25 minutes or until the cheese is golden brown and bubbly.
  5. Top with additional chives and serve warm.
