Breakfast Nachos

Ingredients

  • ½ lb. Sugardale Bacon, cooked and chopped
  • 4 oz. Sugardale Diced Ham
  • 8 eggs
  • 1/3 cup milk
  • Salt and pepper to taste
  • 1 bag corn tortilla chips
  • ½ cup cheese sauce
  • ½ cup pepper jack cheese, shredded
  • 1 cup cherry tomatoes, halved
  • 1 medium avocado, diced
  • Cilantro for garnish

Directions

  1. Preheat oven to 350°F.
  2. In a medium pan over medium heat, scramble eggs and milk with salt and pepper to taste, stirring toward the center until completely set.
  3. Assemble the nachos by spreading the tortilla chips in an even layer on a baking sheet. Layer scrambled eggs, cheese sauce, pepper jack, bacon and ham.
  4. Bake for 5-7 minutes or until cheese is melted.
  5. After baking, top with tomatoes, avocado and cilantro and serve.
