- 3 large egg yolks
- 1 Tbsp. lemon juice
- Salt to taste
- Pinch cayenne pepper
- ½ cup butter
- 1 tsp. white vinegar
- 14-oz. package of Sugardale Breakfast Ham Slices
- 4 eggs, poached or over-easy, your choice!
- 2 biscuits, split
- 1/2 cup baby spinach leaves
- 1 large tomato, sliced
- 1 Tbsp. finely chopped chives
- Make the Hollandaise sauce: Add egg yolks, lemon juice, salt, and cayenne to a standard blender or an immersion blender jug, and blend on high speed for one minute. Melt butter in the microwave. With the blender running, add the hot butter in a slow, steady stream. Continue to blend for about 20 seconds. Set Hollandaise sauce aside.
- Cook breakfast ham slices in a skillet over medium heat, 3 minutes on each side.
- Assemble! Place 2 halves of biscuit on each plate. Layer with spinach, then tomato, then 2 slices of breakfast ham. Top each with an egg, drizzle with Hollandaise sauce, sprinkle with chives, and serve.
