- 1 lb. Sugardale sliced bacon
- 2 eggs
- 1 2/3 cup milk
- 2 cups flour
- 1 tsp. baking powder
- 1/4 tsp. salt
- 1 quart canola oil
- Powdered sugar
- Prepare bacon according to package instructions until crisp. Allow to drain and cool on paper towels.
- Meanwhile, mix the batter by combining eggs, milk, flour, baking powder, and salt in a mixing bowl. Whisk until well combined. If batter is too thick, whisk in additional milk 1 Tbsp. at a time.
- Heat the oil in a heavy bottomed pot over medium to medium-high heat until hot. Using tongs, dip each slice of bacon into the batter and carefully place in the hot oil. Fry for about 45-60 seconds per slice until golden brown, turning occasionally.
- Allow to drain and cool slightly on paper towels or paper bags. Dust with powdered sugar, serve warm.
