Deep Fried Bacon

Ingredients

  • 1 lb. Sugardale sliced bacon
  • 2 eggs
  • 1 2/3 cup milk
  • 2 cups flour
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 1 quart canola oil
  • Powdered sugar

Directions

  1. Prepare bacon according to package instructions until crisp. Allow to drain and cool on paper towels.
  2. Meanwhile, mix the batter by combining eggs, milk, flour, baking powder,  and salt in a mixing bowl. Whisk until well combined. If batter is too thick, whisk in additional milk 1 Tbsp. at a time.
  3. Heat the oil in a heavy bottomed pot over medium to medium-high heat until hot. Using tongs, dip each slice of bacon into the batter and carefully place in the hot oil. Fry for about 45-60 seconds per slice until golden brown, turning occasionally.
  4. Allow to drain and cool slightly on paper towels or paper bags. Dust with powdered sugar, serve warm.
