Ham & Pasta Salad

Ingredients

  • 16-oz. package Sugardale Cubed Ham
  • ½ cup extra virgin olive oil
  • ¼ cup white or red balsamic vinegar
  • 2 tsp. dried or 2 Tbsp. chopped fresh basil
  • 1 tsp. dried or 1 Tbsp. chopped fresh oregano
  • 1 tsp. minced garlic
  • Salt and pepper to taste
  • 2 pts. cherry tomatoes, halved
  • 1 zucchini & 1 yellow squash, cut into 1-inch pieces
  • 1 small red onion, thinly sliced
  • 8-oz container of mini mozzarella cheese balls
  • 1 lb. rotini, cooked
  • Fresh basil leaves, for garnish

Directions

  1. Whisk together oil, vinegar, herbs, garlic, salt, and pepper in a large bowl.
  2. Add vegetables and toss to coat. Let rest for 15 minutes.
  3. Mix in Sugardale Ham, mozzarella, and pasta. Garnish with basil leaves.
