- 16-oz. package Sugardale Cubed Ham
- ½ cup extra virgin olive oil
- ¼ cup white or red balsamic vinegar
- 2 tsp. dried or 2 Tbsp. chopped fresh basil
- 1 tsp. dried or 1 Tbsp. chopped fresh oregano
- 1 tsp. minced garlic
- Salt and pepper to taste
- 2 pts. cherry tomatoes, halved
- 1 zucchini & 1 yellow squash, cut into 1-inch pieces
- 1 small red onion, thinly sliced
- 8-oz container of mini mozzarella cheese balls
- 1 lb. rotini, cooked
- Fresh basil leaves, for garnish
- Whisk together oil, vinegar, herbs, garlic, salt, and pepper in a large bowl.
- Add vegetables and toss to coat. Let rest for 15 minutes.
- Mix in Sugardale Ham, mozzarella, and pasta. Garnish with basil leaves.
