- 2 cups Sugardale ham, cubed
- 2 cups broccoli florets
- 1 red pepper, chopped
- 1 yellow pepper, chopped
- ½ cup onion diced
- ¾ cup shredded carrots
- 4 cups cooked quinoa
- 3 Tbsp olive oil
- 2 tsp garlic powder
- Salt and pepper
- Sauce, if desired
- Preheat oven to 450 degrees. Prepare a baking sheet with foil.
- Chop red pepper and yellow pepper. Dice onion. Cube ham.
- Place red pepper, yellow pepper, onion, carrots, and broccoli onto prepared baking sheet. Drizzle with olive oil. Top with salt, pepper, and garlic powder. Roast for 20-25 minutes or until softened. During the last 5 minutes veggies are roasting, warm ham in a skillet.
- While veggies roast, cook quinoa according to package directions.
- Place 1 cup quinoa into a bowl. Top with red pepper, yellow pepper, onion, carrots, broccoli, and ham. Top with your favorite sauce or dressing, if desired.
