Warm Ham and Grain Bowl

Ingredients

  • 2 cups Sugardale ham, cubed
  • 2 cups broccoli florets
  • 1 red pepper, chopped
  • 1 yellow pepper, chopped
  • ½ cup onion diced
  • ¾ cup shredded carrots
  • 4 cups cooked quinoa
  • 3 Tbsp olive oil
  • 2 tsp garlic powder
  • Salt and pepper
  • Sauce, if desired

Directions

  1. Preheat oven to 450 degrees. Prepare a baking sheet with foil.
  2. Chop red pepper and yellow pepper. Dice onion. Cube ham.
  3. Place red pepper, yellow pepper, onion, carrots, and broccoli onto prepared baking sheet. Drizzle with olive oil. Top with salt, pepper, and garlic powder. Roast for 20-25 minutes or until softened. During the last 5 minutes veggies are roasting, warm ham in a skillet.
  4. While veggies roast, cook quinoa according to package directions.
  5. Place 1 cup quinoa into a bowl. Top with red pepper, yellow pepper, onion, carrots, broccoli, and ham. Top with your favorite sauce or dressing, if desired.
